
Sweet potato ginger soup with coconut

Ingredients
Serves 2
- 300 g sweet potato
- 1 small piece of ginger
- 1 small onion
- 1 tsp rapeseed oil
- 300 ml of water
- 100 ml of unsweetened coconut milk
- Curry powder
- Pepper
Method
1. Chop the veggies and spices
Peel the sweet potato and cut it into medium-sized pieces. Finely chop the onion and ginger.

2. Sauté them
Heat the rapeseed oil in a pan, then add the sweet potato, onion and ginger.
Sauté over high heat for a few minutes until lightly browned.
3. Add water and coconut milk
Pour in the water, reduce the heat and let everything simmer for about 15 minutes — until the sweet potato is soft.
Stir in the coconut milk.
4. Season to taste
Add curry powder and pepper to taste. No stock is needed.
You don’t need any stock for this recipe. Plus, it’s plant-based, easy to prepare, and makes a warm, nutritious meal that can support your health and weight goals.
