
Spring chicken salad
Ingredients
Serves two
- 2 chicken breast fillets (approx. 150 g each)
- 150 g mixed salad leaves (e.g., rocket, green leaf lettuce, red leaf lettuce, oak leaf)
- Half a cucumber
- 150 g cherry tomatoes
- 1 spring onion or small red onion
- 1 tsp rapeseed oil for frying
- Fresh herbs (e.g., parsley)

For the honey mustard dressing:
- 1 tsp honey
- 1 tsp medium or wholegrain mustard
- 2 tbsp white wine vinegar or apple cider vinegar
- 2 tbsp rapeseed or olive oil
- Pepper
Method
1. Cook the chicken
Pat the chicken dry with a paper towel, then season with a little pepper.
Heat a pan with rapeseed oil over medium heat and fry the chicken until golden brown on both sides — about 5 to 6 minutes per side, depending on thickness.
Let it rest for a few minutes, then slice into strips.
2. Prepare the vegetables
Wash and dry the mixed salad leaves.
Halve the cherry tomatoes, slice the cucumber, and cut the onion into thin rings or strips.

3. Make the dressing
In a small bowl, whisk together the honey, mustard, vinegar and oil.
Add a little pepper to taste and mix until smooth.
4. Assemble the salad
Combine the vegetables in a large bowl or arrange them on plates.
Add the sliced chicken on top and drizzle with the dressing.
Garnish with fresh herbs if you like.
Tip:
Make it veggie by swapping out the chicken for tofu or chickpeas! And the honey mustard dressing pairs great with almost any salad or vegetable bowl.
