Tofu stir-fry with vegetables, brown rice & peanut sesame sauce
Ingredients
Serves 2
- 200 g firm tofu, diced
- 2 cups mixed vegetables (e.g. pepper, courgette, carrot, broccoli)
- 1 cup brown rice
- 2 tbsp reduced-salt soy sauce
- 1 tbsp olive oil or sesame oil
- 1 tbsp fresh ginger, grated
- 2 cloves of garlic, finely chopped
- 1 small red onion, sliced
- 1 tsp chilli flakes (optional)
For the peanut sesame sauce:
- 2 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp honey or maple syrup
- Juice of ½ lemon or lime
- ½ tsp grated ginger
- Water, to thin as needed
Method
1. Cook the brown rice
Bring a pan of lightly salted water to a boil and cook the brown rice according to the packet instructions. Once cooked, drain and set aside.
2. Cook the onion, garlic and ginger
While the rice is cooking, heat the olive oil or sesame oil in a large frying pan or wok.
Add the red onion, garlic and ginger, and cook for a few minutes until fragrant.
3. Add the tofu
Add the tofu to the pan and cook until golden brown on all sides.
4. Add the vegetables
Add the mixed vegetables to the pan and stir-fry until tender but still crisp.
Season with soy sauce and, if using, chilli flakes.
5. Make the sauce
In a small bowl, whisk together all the sauce ingredients until smooth.
Add a splash of water to thin, if needed.
6. Combine and serve
Pour the sauce over the tofu and vegetables and stir until everything is well coated.
Serve hot, with the cooked brown rice.
